Fantasy Fudge

Yes, this is the original Fantasy Fudge recipe from the back of the Kraft Marshmallow Creme jar. This is fall out in the floor, slap your Momma for the last piece, FUDGE. And they don't call it "fantasy" fudge for nothing!! ;)

Makes about 117 (so they say)

3 cups sugar
3/4 cup margarine
2/3 cup evaporated milk
1 12-oz. (340 g) package semi-sweet chocolate chips
1 7-oz. (198 g) jar Kraft Marshmallow creme
1 cup chopped nuts
1 tablespoon vanilla

Traditional method: (no fail can't miss!) :p
Combine sugar, margarine and milk in heavy 2-1/2 quart saucepan; bring to full rolling bail, stirring constantly. Continue boiling 5 minutes over medium heat, stirring. Remove from heat, stir in chocolate till melted. Add marshmallow creme, nuts & vanilla beat till blended. Pour into greased 13 x 9-inch baking pan. Let cool and cut into 1-inch squares.

Microwave method: (which I do not advise)
Microwave margarine in 4-quart microwave-safe bowl on HIGH (100%) 1 minute or until melted. Add sugar and milk; mix well. Microwave on HIGH 5 minutes or until mixture begins to boil, stirring after 3 minutes. Mix well; scrape bowl. Continue microwaving on HIGH 5-1/2 minutes; stir after 3 minutes. Stir in chips until melted. Add remaining ingredients; mix well. Pour into greased 13 x 9-inch baking pan. Cool at room temperature; cut into squares. Makes 3 pounds.

Note: Can be made in a smaller pan for thicker squares (yield will be reduced).

RUM SUGAR COOKIES

Easter will be here before you know it. :cool:

Swiped shamelessly from Martha Stewart, with my own wicked twist on it. LOL

Soft cookie dough loses its shape when moved; to retain crisp cut edges, refrigerate dough until firm before baking.

Ingredients

Makes 2 dozen


2 cups all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 cup (1 stick) unsalted butter
1 cup sugar
1 large egg, lightly beaten
2 tablespoons brandy, or milk (I used rum)


1/2 teaspoon pure vanilla extract


Directions

Whisk together flour, salt, and baking powder in a medium bowl. In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar; add dry ingredients, and mix until incorporated. With mixer running, add egg, brandy (or milk), and vanilla; mix until incorporated.
Transfer dough to a work surface. Shape into 2 discs, cover with plastic wrap, and refrigerate for at least 1 hour.
Preheat oven to 350 degrees. Line baking sheets with nonstick baking mats or parchment paper; set aside.
On a lightly floured work surface, roll out dough to 1/8-inch thickness. Cut into desired shapes, and transfer to prepared baking sheets, leaving an inch in between. Leftover dough can be rolled and cut once more. Bake until lightly golden, about 10 minutes; do not allow to brown. Transfer to wire racks to cool.

English Custard (with recipe) Custards are one of those yesterday desserts that never should have gone out of style. They are still used as pie fillings—pumpkin pie, of course—but they make versatile desserts without sticking them in a pie shell. Because they are made of eggs and milk (with some sugar), they are better for you than most other desserts. We'll give you a recipe for a very easy custard and you can dress it up if you choose with syrups or fruit or in a pie crust.
We like custards but admittedly, your kids might not. This recipe is so easy, it's worth the try. Chances are, you'll like it.
Easy Custard
4 cups milk
6 large eggs
2/3 cup sugar
1/2 teaspoon salt
1 tablespoon vanilla
Directions
1. Heat the milk until hot, two or three minutes in the microwave.
2. Whisk the eggs until smooth. Combine the eggs and the milk.
3. Add the sugar, salt, and vanilla and stir until dissolved.
4. For a smoother custard, pour the mixture through a strainer. Stir again.
5. Pour the custard into custard dishes, a casserole dish, or a pie shell.
6. Bake at 325 until a knife inserted in the center comes out clean. In individual servings, that should be about 30 minutes. In a single dish, about 60 minutes.
7. Cool before serving.
Traditionally, custards are served with caramel sauce. Sliced strawberries or fresh blueberries also work well with custard.

Hummus

My recipe is:

2 cups canned chick peas (garbanzo beans)
3 tablespoons tahini paste
1 clove minced garlic
juice of 2 lemons
salt to taste
a little bit of olive oil

Combine all of the ingredients except the olive oil into a food processor or blender. Add 1/2 cup of water.
Process to a thick puree'. When you store it in the fridge, put a teeny bit of olive oil on top to keep it from getting funky. http://x.myspace.com/images/blog/smileys/exhausted.gif You can eat it cold or room temp, but store in the fridge when not using.

We like our hummus on toasted pita bead. Try it! It's YUM!!

here's one of my all-time favorite things to make if i'm bringing something to a cookout, or just whenever. :)


TACO DIP:

1 lb ground beef
1 packet taco seasoning
1 can refried beans
1 small jar salsa
1 lb cream cheese
shredded cheese (i usually use the kroger brand "mexican cheese")
tortilla chips


preheat oven to 350 degrees. brown hamburger and add taco seasoning (with 2/3 cup water). mix refried beans in with hamburger. pat softened cream cheese into a pie plate. add hamburger/bean mix, then a layer of salsa. top off with shredded cheese. bake for 25-30 minutes, and serve with tortilla chips.

IT'S AWESOME.

7 Layer Dip

(good for vegetarians or Lent!!)
Add in order:

1 can fat free refried beans (fat free means no pork lard)
1 small tub of sour cream with taco seasoning mix stirred into it.
cover with a layer of salsa
mash up and spoon on fresh avocado or use prepared guacamole
Freshly grate some cheese over this... about 4 oz.
slice and add 1 or 2 green scallion onions
drain a small tin of sliced black olives and top it off

Serve with tortilla chips.
